Hey has anyone ever seen or tried decking out an OC? Many people out west deck out dories for whitewater with built-in cabinets. It seems like it would be better for storage for overnights, and no airbags!

here's a cool movie about dories in grand canyon- https://www.youtube.com/watch?v=2fG0VyVm4Mk" onclick="window.open(this.href);return false;
hers a short 30 second time lapse of one getting built- https://www.youtube.com/watch?v=T8tstgrboSI" onclick="window.open(this.href);return false;

They are only a little better than full bags in keeping water out, but they make it difficult to get the water out. I tried it about 40 years ago when "float bags" weren't nearly as nice as now, too. Generally, you're looking at a looming disaster with water in the boat.

If you're talking about installing actual watertight compartments as the decks of your OC-1 you'll need to start with a lightweight composite boat, and by the time you're done with everything (decks/hatches/supports for decks and hatches/seals) you'll have probably made it heavier than a plastic boat...and the first time you smash through a major hydraulic feature it will probably leak anyways.
ANYTHING can be done with application of enough time, money, and/or experimentation, but this seems like it would be a major headache.
