Not that I am any sort of expert,but I am 5'7" paddling an outrage and use a 56 most of the time because that is what I have. However, I used a 58 the other day and liked it. I think I am getting a new paddle this summer and plan on it being a 58.

So i typed out a bunch of stuff and did not like the way it sounded so here is my simplified opinion.
The more rocker, the more play. If you want to or need to catch lots of eddies and make tight moves, get more rocker. You want to just run through, less rocker.

I just let my saddle rest on my head and walk, but that might not work for you. My wife is 5 foot and 100 pounds. The only way I could see her moving my Outrage would be with a set of portage wheels. You may look into that option.

So as I am looking through the OR footage, I see Wenonah is coming out with a 13 foot c1. I am a huge Wenonah fan, and I can not wait to hear more about this boat. Any thoughts on the boat? That really is a cool boat. We are the same height/inseam. I use a 56 and am happy with it in my Outrage. It felt long at first, but I like it now. I can tell you that I plan on getting paddles in 54 and 57 or 58 to play with.
